Last weekend I visited Cuckoo’s Bakery to interview the owners Graham Savage and Vidya Sarjoo for my upcoming From the Tree November post. It was a perfect afternoon and I think it’s safe to say that a delicious time was had by all!
During the interview the dynamic duo mentioned that one of their latest creations, the “Cranachan inspired” cupcake had caught the attention of British Baker and as a result they were about to become the stars of their very own cookery Youtube video for the magazine. Cranachan Cupcakes
Ingredients [makes 12]:
- 100g butter
- 125g sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 100g flour
- 150g oats
- 1/2 teaspoon baking powder
- 80g warm milk
- A small squeeze of lemon juice
Whisky Buttercream
- 125g butter
- 300g icing sugar
- 3-4tbsp whisky

Those sound utterly fabulous! I so want to make them this weekend but that would be bad news for the diet. It makes a lot more sense than haggis chocolate, I suppose…
