A few weeks ago we came across patissier, Ross Baxter, and his delicious blog. Having spent the last year as Head Pastry Chef for Albert Roux at Chez Roux and with descriptions on his blog such as the following, we thought he would be the perfect patron of our new monthly guest blog…

Dark chocolate & bourbon vanilla mousse, cassis bavaroise insert, toasted crispy almond disk & toasted nutty dacquoise sponge. Finished with dark glacage, cassis pate de fruit, milk chocolate decor & isomalt sugar hazelnuts.

 


Hello! My name is Ross Baxter and I’m a Patissier living in North Berwick…

Originally I’m from Glasgow and come from a family of traditional bakers and pastry chefs. Throughout my childhood I’ve been surrounded by flour and sugar from grandfather’s bakery; I was forever in trouble for stealing handfuls of his marzipan.

Now, I’ve started up my own independent pastry business, creating afternoon teas, dessert canapés and teaching one to one and group pastry classes. I found my way here through a lot of hard work and great experiences working with chefs like Michaels Caines and Albert Roux.

Pastry for me is all about tastes and textures that entertain the palette, with components that are crisp and creamy, or fruity and moist. With this in mind, I’m going to show you how to make a simple Verrine dessert; absolutely delicious and suitable for any dinner party.
